Baked Mutton Snapper















Once you catch the fish then you will need some recipes. I thought it would be good to try the whole fish baked and this Mutton Snapper turned out great. It just fell off the bone.


Ingredients

Whole Mutton Snapper
1 tbsp Parsley
1 tbsp Oregeno
1 tbsp Basil
1 tsp lemon
3 cloves Garlic
3/4 cup finely chopped onion
1/4 cup Dry White Cooking Wine
1/2 cup Extra Virgin Olive Oil
1 tsp each Salt & Pepper
Italian Bread Crumbs


Saute' the onion and garlic in olive oil until tender. Add the parsley, oregeno, basil, lemon and dry white cooking wine. Continue to simmer for 5 more minutes. Then brush all over the fish on both sides. Once the fish is coated spread bread crumbs on both sides.

Bake covered in the oven at 350 degrees for 30 minutes. Uncover and bake an additional 10 minutes to brown the skin of the fish. Serve over a bed of pasta or rice with your favorite vegtables.

As always when eating a whole fish be careful about the bones. The fish is so tender that if you gently pull away from the bones the fish will just fall right off.

Joe with a Barracuda


This is Joe with the Barracuda that he caught. He was fishing on the bottom for Snapper and Grouper when he caught this one. The Barracuda fought hard and we weren't sure at first what he had caught. Then we realized it was a Barracuda. These are hard fighting fish with large teeth and fun to catch but not to eat. You have to be careful unhooking this fish. One wrong move and a few less fingers.

He still had a good time even though he was going home hungry!! Maybe next time Joe... In world of fishing you are not always eating well. That just means he will have to come back.

Chris with a Spanish Mackerel



Here is Chris with his Spanish Mackerel. We were fishing about 3 miles offshore from Islamorada. We were drifting using a dead ballyhoo on the surface when the fish attacked the bait. As the fish was taking the line Chris engaged the reel and set the hook. He fought the fish for about 10 minutes before WildBill gaffed the fish onboard the boat.

Chris took this one back to Tennessee along with the Kingfish that he caught. I am sure he will be back soon to go fishing again. He had lots of fun!

Fly Fishing in the Keys

This past weekend I went Fly Fishing in the Keys of Florida. Chris and Joe came down from Tennessee to catch some fish. We rented a boat from Bud and Mary's Marina in Islamorada for the day. Since they only get to fish in fresh water it was an exciting day for them. They both caught some fish to take back home.

The girls went shopping at the Rain Barrel where you can find all sorts of stuff. There are several shops loaded with beautiful art from the local artists. If you ever get to Islamorada this is a must to stop in and stroll through the tropical gardens.

We ate at the "All You Can Eat Buffet" and it was awesome. They had all sorts of seafood prepared just about any way you can imagine. They even have a stirfry chef to prepare your own creation. Fishing vacations can be a real treat for the entire family.
