I recently visited Colorado Springs and as you can see Pikes Peak is still covered with snow. The rivers looked a little dry for fishing. I would recommend late Spring or Summer when searching for trout. I did spot a few land species...Snow Shoe Rabbits, Pronghorn Antelope and Mule Deer.

Remember when visiting Colorado the air is thinner due to the high altitude and this can make it difficult to breath. You need to drink plenty of water since you are in a dry environment to prevent dehydration.

Dining at The Bright Star

The Bright Star is where history and fine dining come together. The Bright Star Restaurant began as a small cafe in 1907 and is located in Bessemer, Alabama near Birmingham. For over 90 years they have been serving Greek style snapper and steak and are dedicated to customer satisfaction.

They serve the best Southern food along with Seafood specialties. I had the pleasure of speaking with one of the owners during my visit. Jimmy Koikos was there mingling with the guests and it was a treat to talk with him about the history of the restaurant and the men who have built the reputation of fine dining there in Bessemer, Alabama.

If you ever have the opportunity to travel to Bessemer I highly recommend lunch or dinner at The Bright Star!
