Smoked Salmon Salad











The fish needs to soak overnight in a brine. The brine consists of 2 cups Coarse Kosher Salt and 1 cup Brown Sugar. Then add enough water to cover the fish.

I sprinkle Tony Chachere's Creole Seasoning all over the fish just before I put it on the smoker.

It does take about 3-4 hours to smoke the salmon. Depending on the heat and if you prefer it dryer then you can smoke it longer.

The temperature gauge on the smoker is warm, ideal and hot. It is best when the temperature is just below ideal. If you cook it too hot and too long then the fish will become too dry. You can see from the picture I smoked three types of fish. I smoked Salmon, Tuna and Kingfish.

Yesterday's Catch

It was a good day of fishing...I caught a Sailfish, Frank caught a Kingfish and Mark caught a 30 pound Blackfin Tuna. Frank and Mark go fishing all the time but never seem to catch any fish unless they bring me along.

Frank has a 28 ft Edgewater open fisherman. It sure beats my little Jon boat!!


They really enjoy me going with them since we always catch fish. I take them to the honey holes where the fish are.













As you can see Mark is excited about the Kingfish since this was his first.

Dining in Deland, Florida

Recently Patsy and I visited some friends in the Daytona area. They took us to Emmy's Time Out Tavern in Deland, Florida. The atmosphere was warm and cozy. It was a great place to catch up on old times with our friends.

I recommend the pan fried Grouper. This was the most delicious I have ever had. It was filleted thin and it was very tender. Emmy was there so we tried to get her secret recipe. I do know she makes her own bread crumbs so I am sure this is her secret.
